Ah, maca! It's certainly become my latest obsession. I've been feeling extremely tired recently, and hopefully including a few teaspoons of maca in my diet each day will help. However, blending it into a smoothie every morning was getting a bit boring, and so these maca protein pancakes were born! Totally clean, refined sugar free, and vegan. I recommend using organic ingredients wherever you can. Enjoy!
Maca Protein Pancakes
Serves 1 (makes 3 small pancakes)
For the pancakes:
- 2 heaped tablespoons buckwheat flour
- 1/2 banana
- 1/2 tsp baking powder
- 1 tsp maca powder
- 1 tsp pure vanilla extract
- 1 tsp chia seeds
- Sufficient unsweetened almond milk to bring to a pancake-batter consistency
- 1 tsp coconut oil
To top:
- I like to layer mine up with CoYo and organic berries, but whipped coconut cream, maple syrup, other fruits, or even cacao nibs would all be delicious
Method:
- Combine all ingredients in a blender.
- Add a little almond milk at a time until your mixture reaches the consistency of regular pancake batter.
- Heat the coconut oil over a medium-high heat in a frypan.
- Spoon a dessertspoonful of batter into the frypan at a time, spreading the batter out with the back of the spoon.
- Once holes appear on the surface of the pancake, flip with a spatula and repeat with the remaining batter.
