Raw Goji Brownies


Goji berries and cacao nibs are a match made in heaven. Luckily this raw vegan treat contains both of these wonderfully nutritious ingredients! These are honestly incredible, and can be prepared in five minutes flat.

Raw Goji Brownies
Makes 8 squares

Ingredients:

  • 2 cups raw pecans. 
  • 2/3 cup raw cacao powder. 
  • Pinch Himalayan salt. 
  • 20 pitted medjool dates. 
  • 1/2 cup goji berries. 
  • Cacao nibs, to top.
Method: 
  1. Pulse the pecan nuts, cacao, and salt in a food processor until the nuts are broken down into small pieces. 
  2. Add the medjool dates and process again until sticking together when pressed between your fingers. 
  3. Add the goji berries and briefly pulse until evenly distributed throughout the batter. 
  4. Press brownie mixture into a small square tin and smooth the top out with the back of a spoon. 
  5. Sprinkle with cacao nibs and gently press them into the top of the brownie. 
  6. Freeze for a few hours until hardened. Keep chilled in fridge or freezer, depending on your preferred texture.
