Raw Goji Brownies
Makes 8 squares
Ingredients:
- 2 cups raw pecans.
- 2/3 cup raw cacao powder.
- Pinch Himalayan salt.
- 20 pitted medjool dates.
- 1/2 cup goji berries.
- Cacao nibs, to top.
Method:
- Pulse the pecan nuts, cacao, and salt in a food processor until the nuts are broken down into small pieces.
- Add the medjool dates and process again until sticking together when pressed between your fingers.
- Add the goji berries and briefly pulse until evenly distributed throughout the batter.
- Press brownie mixture into a small square tin and smooth the top out with the back of a spoon.
- Sprinkle with cacao nibs and gently press them into the top of the brownie.
- Freeze for a few hours until hardened. Keep chilled in fridge or freezer, depending on your preferred texture.
